Oaxacan Green Dent Corn
This incredibly tall variety of vibrant green corn comes to us from the Zapotec people of Oaxaca, Mexico. The stalks regularly grow 8 feet tall and produce large cobs of green corn that can dry right on the plant. This is the best-performing variety of corn in my Three Sisters gardens due to it's height, sturdiness, and speed of growth.
"Dent Corn" is a general term for starchy corn varieties used to make cornmeal and corn flour. This heirloom variety was traditionally used to make bright green tortillas!
Growing Tips:
- This variety is drought-tolerant once germinated. Ensure soil is moist during the germination period, then watering is largely unnecessary.
- I plant this corn first in my Three Sisters garden, on the first day after the last frost. Once it is 6 inches tall, I plant my beans and squash. Here is the guide I use, including garden plan:
